Tessels Goud is the name for this pancake. In the 13th and 14th centuries, the island was described as variants of "Tessel" and "Texsel." The modern spelling is Texel, but it is still pronounced "Tessel" due to the remnants of an old dialect and the historical pronunciation. Goud comes from "Witte Goud," as we call asparagus in the Netherlands. The Tessels Goud pancake mix is ​​made with Texel flour and has a hint of asparagus. Ingredients;

Preparation method

Place 1 bag of 450 grams Tessels Goud pancake mix (asparagus) in a bowl with 500 ml of milk and stir until smooth.

Add the next 500 ml of Jersey milk and mix until smooth and lump-free.

Boil the eggs to preference;
4 min. soft
6 min. medium soft
8 min. hard

Boil the peeled asparagus for about 5 minutes in water seasoned with 2 bay leaves, a little sea salt, and mace (nutmeg husk). Let them cool in the liquid. Then chop the asparagus.

Preheat the Buyer pan , add the butter until it is warm and spread it in the pan.
Then add the desired amount of pancake batter and fry for about 2 minutes on each side until a delicious light brown pancake is formed.

Serve the pancake on a nice plate and decorate with the asparagus, egg, samphire and possibly Hollandaise sauce.
